Fondido de Champinones

Portobello mushrooms sautéed with tomatoes, onions, red bell peppers, fresh jalapeno and garlic. Rolled in a flour tortilla, topped with green tomatillo sauce and Monterrey Jack cheese. Served with rice and beans.

Zucchini, squash, broccoli, red onions and Portobello mushrooms sautéed in a little fresh garlic and olive oil. Poured over a bed of rice in a grilled spinach tortilla, then topped with freshly cracked black pepper.
